The Hiroshima Food Festival opened in Hiroshima, Japan, on October 24, bringing about 220 booths to Hiroshima Castle and nearby venues. The 20th edition features participants from cities and towns across Hiroshima Prefecture. Long queues formed for local food on the opening day, including hot fried pizza. A digital stamp rally encourages visitors to sample food around the venues.
Among the local specialities is Hiroshima-style okonomiyaki, a dish prepared by cooking its ingredients in layers on a large iron griddle. Those ingredients include a thin wheat-flour batter, vegetables such as cabbage and bean sprouts, and noodles. Sauce and seaweed are added to finish the dish.
Mitchan Sohonten said its stall would boil fresh noodles on site and use the same cooking process as its restaurants for each okonomiyaki. The festival is also scheduled for October 25. Admission to the event is free, but visitors purchase food and drinks separately.
